Tequila & Lime Oysters
Try this easy to prepare dressing which is great as an appetisers served with an icy cold Sav Blanc. The punchy citrus flavours with the option of chili really add depth of flavour to the distinct flavours of the oysters
I’ll agree Oysters aren’t for everyone but this recipe should be able to convert at least a few of the doubters
INGREDIENTS
- 2 tablespoons lime juice plus a teaspoon of fine lime rind
- 2 teaspoons tequila
- 2 teaspoons caster sugar
- 2 Tablespoon finely chopped cilantro (coriander)
- 2 Tablespoon finely chopped mint leaves
- Optional: 1/4 chopped birdseye chili seeds removed
- 12-24 Schucked Oysters
Method
Pretty easy this one. Just combine lime juice, rind, caster sugar, cilantro, mint in a bowl and stir until the sugar dissolves. Plate up Oysters on mounds of rock salt and drizzle dressing over the top – adding chili if desired
