CHICKEN TINGA TACOS
Quick and tasty chicken tinga recipe
INGREDIENTS
- 500 grams Chicken Breast
- 400gm tinned tomatoes
- 1 White Onion
- 1 tablespoon chipotle in abode (sauce only)
- 1/2 Teaspoon Cumin
- 1 Teaspoon salt
- 1 Teaspoon Oregano
Method
Bring whole chicken breast to the boil with one half of a peeled white (no need to chop as this is to add flavour and will be removed after cooking. Once boiled turn off heat and allow to steep for 30 minutes covered with lid. Remove from pot and shred chicken with 2 forks leaivng aside. Meanwhile in a pan add onion and garlic and allow to soften and remove acidity, add tomato, chipotle, cumin, salt and oregano. Allow to boil and reudce slightly below returning to low heat and adding shredded chicken.
